The brewery is on the Gaspe Coast in a small village known as St-Isidore.

Yes! You can purchase beer and promotional items for takeout. However there is no taproom.

The 1st beer should be available between Fall 2019 & Spring 2020.

Once the brewery is operational there will be guided tours by reservation only.

Starting off, our beers will only be sold at the brewery a tat the Pit Caribou pubs in Montreal & Perce.

Unfortunately not. Only bottles of 330ml and 750ml will be produced.

No commercial yeast is used during the fermentation process. Our beers are 100% barrel aged & fermented.

No pilsners, IPAs or stouts ! In other words no « grand public » beers. All 100% spontaneously fermented beers using locally
produced/collected/harvested products from the beginning to the end!

An ancient type of fermentation that permits the wort to be inoculated without the addition of commercial yeast. This is done by letting the wort cool overnight in an open bassin known as a coolship.

This is the bassin used to cool the wort overnight after boiling. It is sufficiently deep as to properly let the wild lactic bacterium & yeast present in the air during the cooling period inoculate the wort.

Any yeast not artificially produced in a laboratory. We collect our wild yeast in our beautiful backyard (Gaspesian flora!).

A type of wild yeast that gives a « funky » taste to your beer. Many types of brett yeast exist.
