First of all, know that at Brett & Sauvage there is only one basic recipe. From the same malt and hops, we design our beers with native spices and berries, by assembling different barrels and, of course, by inoculating part of our production with ferments collected from plants in the local forest. The naturally occuring lactic bacteria & yeast present in the air inoculates the liquid as it cools overnight in our coolship, conferring its complexity on the finished product. The season, the rain, the good weather and even the direction of the wind influence the flora of our wort at the time of its passage in cooling tank, commonly called coolship.

All our beers go through the coolship. Once the wort has cooled to room temperature it will be transferred to oak or stainless barrels. Some barrels will have wild yeast added whereas others will have already begun the fermentation process due to the lactic bacterium & yeast present in the air during the cooling period. This is what is known as spontaneous fermentation. At
Brett & Sauvage all beers will
age/ferment in 400L oak wine barrels or in our special 300L stainless steel barrels.

Our beers are not yet in the production stage. However we wish to briefly inform you about the possibilities of this type of beer production. Please note that our products will be 100% Quebecois including our aromates, yeast and bacterias.

THREE CATEGORIES OF BEER will be offered :

1.

Spontaneous Fermentation series are beers made without the addition of ferments. Raised from a few months to several years in barrels that have contained red wine, this is our classic everyday beer.

2.

Nature Culture Series are beers aromatised with spices from the Gaspesian forest aged for several months in old red wine barrels. They communicate the flavors without exuberance while offering good drinkability. Unlike gruit, our Indigenous series contains aged hops, a reminder of our traditional beers. This series will be developed from seeded beers, spontaneous fermentation beers or a combination of both.

Indigenous Series are berry-flavored beers harvested from the Gaspesian forest or grown by producers in the region. Whether you like the taste of beer or not, you’ll love these explosions of fruit in the mouth. The beers in this series are pink or red, sometimes bluish or purple, depending on the fruit used and the acidity of the brew. Very refreshing products, perfect on a sunny terrace, summer!
